Unfortunately DENIC entries don't have a "created" date.
However, judging by the "Changed:" entries, it must date back to at least August 2003.
I can recommend whois.thur.de for DENIC lookups.

I have found a subdomain which seems to host a lot of phishing attacks, any contact details for this domain would be appreciated.

That's apparently the Login-page for the "Racer" products of server4you.de, web hosting. The AUP mentions spam as verboten:

Looks like about December 2003.
Anyway, they look like a subdomain host to me, with at least a few legit sites... probably not worth a lot more effort.
